Cocktail of the Week #23 - Amaretto Sour BC Style

I love Jeffrey Morgenthaler's Amaretto Sour recipe but I wanted to take it and tweak it. I used the Sons of Vancouver Sherry Barrel Aged Amaretto and the Odd Society Maple Whisky, decadence on decadence; paired perfectly together.

AMARETTO SOUR (BC STYLE)

1 1/2 oz (45mL) Sons of Vancouver Sherry Finished Amaretto

1/2 oz (15mL) Odd Society Maple Whisky

1/2 oz (15mL) simple syrup

3/4 oz (22.5mL) lemon juice

1 egg white

Glass - Small Old Fashioned

Method - Dry shake all ingredients and then wet shake with ice, double strain

Garnish - picked cherry

BC Spirits "Spirits of the Week" #6 - Okanagan Spirits Georgia Straight

BC SPIRITS NOTES

I can't lie but I am tickled pink with the way that the Okanagan Spirits Georgia Straight came out. It is my personal blend, a classic Canadian whisky finished in oloroso barrels and bottled at cask strength. Green spice notes on the nose hide the sneaky dried fruit and pop of cacao, butterscotch and rye spice.

Alcohol - 54% / 104 proof

Color - Burnt copper orange

Nose - Green rye spice, hints of deep stewed fruits and tight sherry notes

Taste - Once the green rye spice blows off, the rich sherry notes of stewed fruit, chocolates, toffees and butterscotch balance with the structure whisky and rye spice tones

Finish - Long and luxurious, sherry heads will love it

Best Enjoyed - Neat

Cocktail of the Week #22 - Brooklyn

The Brooklyn is a Manhattan rift that is widely loved but rarely made because the difficulty of getting Amer Picon, enter Legend Distilling Naramaro. A Picon clone I helped create a number of years ago specifically for this cocktail. We have all the ingredients to make being made with BC spirits now, which is very cool.

1 1/2 oz (45mL) Odd Society Prospector

1/2 oz (15mL) Ampersand Imperative Vermouth

BC Spirits "Spirits of the Week" #5 - Odd Society Monarch

DISTILLERY NOTES

Odd Society is launching a new, unique program specially designed for whisky lovers and anyone who wants to learn about whisky.

As a member, you will receive one 750 ml bottle of 46% abv single malt spirit/whisky every year for five years. Interestingly, and importantly, the whisky you receive each year is all from the same original batch. The idea is to follow the flavour maturation journey of a single whisky from new-make spirit to maturity.

We begin by distilling a large batch of new-make single malt whisky and filling a number of casks.  You will receive a bottle of 46% fresh, new-make spirit. After one year, the spirit you receive will be one year old. After two years the spirit you receive will be two years old (still not technically whisky), year three, three years old and so on, until year five, when you receive a final bottle of five year old single malt whisky. The whisky is distilled from 100% BC-grown malted barley, aged in once-used American white oak casks. Each year, all the barrels are emptied, the spirit remarried in a tank, and returned to the same casks. Each year, the label will commemorate the whisky milestone.

BC SPIRITS NOTES

This is a fantastically unique and fun experiment, if you join the Five Year Whisky Club at Odd Society Spirits, you will receive a bottle of the spirit in each form every year, showing how it progresses and changes over the course of 5 years. The new make is bright and fresh, fruity apple and pear along with great grain profile, hints of minerality and a long finish. Looking forward to seeing how this progresses.

Alcohol - 46% / 92 proof

Color - Clear

Nose - Green, bright grains, hints of stonefruit, apple and pear

Taste - Fruity grain notes with hints of smoke and a long soft vanilla

Finish - The grain is structured and complex, hints of fruity notes and vanilla

Cocktail of the Week #21 - The Explorer

Have had this cocktail in one way shape or form over the last decade but is still one of my favorite akvavit cocktails ever.

THE EXPLORER

2 oz (60mL) Sheringham Distilling Akvavit

1/2 oz (15mL) Frost Bite Elderflower Syrup

1/3 oz (10mL) lime juice

2 dashes of Scrappy's Black Lemon Bitters

Glass - Small cocktail glass

Method - Stir all ingredients with ice and strain

BC Spirits "Spirits of the Week" #4 - Marrow Arancio Vermouth

DISTILLERY NOTES

This Arancio Vermouth is made from naturally fermented skin contact Pinot Gris from the Similkameen Valley. The wine was macerated with lavender and chamomile and the spirit base was macerated with rhubarb root, lavender, chamomile, sweet cicely root, yarrow flowers, and arugula flowers from Puzzlegrass farm on the Naramata Bench.

A small amount of the bitter orange peel and kola nut was added halfway through the maceration period. Local honey and organic sugar were both used to sweeten this. The result is a luscious fruity sweet vermouth that finishes with herbal complexity and texture.

BC SPIRITS NOTES

Brand new from Shaun at Marrow Vermouth, this leans into the skin contact Pinot Gris heavily. While most macros producers care very little about wine quality, Marrow pairs wine with botanicals to create an aromatic and fragrant vermouth that is perfect to keep chilled and pour over the rocks with a slice of lemon. The wine is an amazing back bone to the fruity and fragrant botanicals that are infused into the mix, I find that this is by far the best expression from Marrow yet.

I love the White Lady cocktail, delicious in it's simplicity. I used the tasty apple based gin from Alchemist Distiller along with the Legend Distilling Manitou for the bright orange component. Making classics with BC ingredients.

BC Spirits "Spirits of the Week" #3 - Odd Society Boneyard

DISTILLERY NOTES

Boneyard is an archive of Odd Society history—a testament to our whisky heritage. With a nod to the Solera process of fractionally blending alcohol like wine and sherry in such a way that the finished product is a mixture of ages, we collected a litre of whisky from every bottling session since 2016 and saved the blend in one single cask. Rye, single malt and maple whiskies were all married together with the oldest addition being over seven years old and the youngest being four. We invite you to drink to the past and dream of the future with the release of Boneyard; a wonderfully unique, complex and rich whisky.

BC SPIRITS NOTES

Incredibly unique offering from Odd Society Spirits and a very limited run available, the Boneyard Whisky is a "solera style" of combining 1 litre from each whisky that they have ever released and adding them into a barrel and letting them age together. A combination of rye, single malt, maple whisky, everything from 4-7 years old. This combination is a flavor overload in the best way possible, dry rye spice balances out the sweetness from the sweet maple and then the single malt is their as the backbone and commander.

Alcohol - 46% / 92 proof

Color - Deep mahogany

Nose - Deep butterscotch and toffee notes with hints of dry cacao and maple

Taste - The Commodore is bright and fresh then flows in the maple, spicy rye, those creamy butterscotch and toffee notes

Finish - Rich spice, hints of maple and long bite of Commodore

Best Enjoyed - Savored neat

Had to do a nice simple cocktail this week, and if you are making a Bees Knees in BC, you should be using the delicious honey based gin from Wayward Distillery.

BC Spirits "Spirits of the Week" #2 - Moon Distilling Antifogmatic Bliss

DISTILLERY NOTES

Barrel #3* used the same great Vancouver Island grown malt and same double pot-distilled method as our first barrel.

This new whiskey was aged for 2 years in an American Bourbon barrel before being finished 1 year in a lighter, French Oak Kokako Kiwi Sour barrel.

This results in a slightly heavier Oak presence up front with a lighter colour and finish.

BC SPIRITS NOTES

The second delicious release from Moon Distilling and they took it up a notch. Delicious 100% Island Barley aged 2 years in an ex-American Oak Bourbon barrel, then finished 1 year in our previously "Kokako" Sour Kiwi beer (Ex-Wine, French Oak) barrel. This gives it a classic "lawnmower" style Speyside drinking whisky that give bright citrus and spring time notes of cut grass with deeper cherry, chocolate and coffee. Only 194 bottles, so be quick.

Alcohol - 42% / 84 proof

Color - Light copper orange

Nose - Citrus, cut grass with hints of deeper tones of cherry chocolate

Taste - That lawnmower Speyside style is evident, cut grass, citrus peel with hints of bright hops are balanced with deep oak notes of cherry, chocolate and coffee

Finish - Long fruity notes play well into the bright notes of citrus and hops

Best Enjoyed - Savored neat

Cocktail of the Week #18 - Passionfruit Sour

Super simple riff on a Pisco Sour using Arbutus Distillery Grand Visco which is an underrated little brandy coming out of BC. This is a fun and simple recipe for the at home bartender.

PASSIONFRUIT SOUR

2 oz (60mL) Arbutus Distilling Grand Visco

1/2 oz (15mL) Giffard Passionfruit syrup

3/4 oz (22.5mL) lime juice egg white

Glass - Nick and Nora

Method - Dry shake all ingredients, then add ice and wet shake. Double strain

Garnish - 5 drops of Rootside Bitters & Mixers Rosehip Lemonade Bitters

If you love absinthe, then you will love this very simple cocktail using Okanagan Spirits Craft Distillery Taboo, a little simple syrup and sparkling wine.

BC Spirits "Spirits of the Week" #1 - Stillhead Distillery Blackberry Port Finish

DISTILLERY NOTES

This single cask Rye Whisky was aged in an ex-bourbon barrel for 2 years before continuing maturation for 1 1/2 years in a Blackberry Port-style cask from Cherry Point Vineyards.

Gingerbread, Molasses, menthol on the nose, Christmas cake, cloves, fig newtons on the palate, and medium creamy, black tea and pepper finish.

BC SPIRITS NOTES

What a great one from Stillhead Distillery to commerate the first "Spirit of the Week". A new release of their already fantastic rye whisky. This time it's finished in blackberry port casks, giving it a slightly fresh blackberry nose and then it's all fragrant rye spice. On the palate, the blackberry creeps through in the front, sweet and fruity and then that rye just busts the door down and makes you know what you are drinking. Gorgeous rye with those hints of complimenting blackberry fruitiness.

Alcohol - 46% / 92 proof

Color - Burnt copper

Nose - Sweet rye bread with hints of blackberry jam

Taste - The rye is spicy and complex and the added addition of the sweet fruitiness of the blackberry balances it out before the rye spice comes barreling back in the finish

Finish - Fresh rye bread, blackberry jam and hints of mineral flintiness

Best Enjoyed - Swap out for your rye in a Manhattan

I love the Wayward Distillery Drunken Hive, it's a tough call to label this as rum, it is a Somel or distilled honey spirit. Flavor is amazing, rich and complex and makes a fantastic daiquri riff.

This week we play around with a cocktail isn't really a cocktail due to it being made up predominently by a liqueur, a quinquina and a smidge of cherry eau de vie but for some amazing reason it works brilliantly.

BC Spirits "Spirits a Day" #365 - Resurrection Spirits Pale Rye

DISTILLERY NOTES

Our Pale Rye is distilled twice through our Whisky helmet, then aged in 20 L casks for 4 months.

Not a Whisky but alluding to one, the Pale Rye shares similar attributes. Use it in your favourite Manhattan, Old Fashioned or sour cocktail and enjoy the distinctly Canadian flavour of pure rye.

BC SPIRITS NOTES

As a bartender owned brand, Resurrection Spirits is one of my favorites, not only because every spirit is well thought through with tasting and versatility but they make damn fine spirits. The Pale Rye is 100% aged in oak for 4-6 months, and while it is a young "whisky", it packs a whallop in flavor, the rye spirit is spicy and complex while the cask adds gorgeous round vanilla, caramel and toffee notes along with old rickhouse oak notes.

Alcohol - 45% / 95 proof

Color - Burnt copper

Nose - All rye spice, American style, with hints of vanilla and caramel

Taste - The rye spice is so poignant and delicious, the vanilla, caramel and toffees balance it off perfectly with old rickhouse oak notes sitting in the background

Finish - Long rye spice notes with hints of the sweetness and oak

Best Enjoyed - Versatile as a cocktail ingredient, solid rye substitute

Bamba Vodka was made to disrupt your perception of what vodka is, and how it should taste, by producing a naturally delicious vodka, using the highest quality local ingredients.

BC SPIRITS NOTES

Bamba Vodka is relatively new to the market and is definitely going to grow. 100% organic corn, it is rich and textural with an undeniable corn note, creamy and distinct. Hints of minerality and a long finish that reminds you of the sweet corn on the palate.

Alcohol - 40% / 80 proof

Color - Clear

Nose - Sweet corn distillate on the nose, fragrant and creamy

Taste - Texture for days, rich and creamy, fresh minerality and a very pleasant length

Finish - The creamy and richness plays well with the subtle minerality

Best Enjoyed - Good sub for the macro brands

BC Spirits "Spirits a Day" #363 - Tofino Distillery Lavender Mint Gin

DISTILLERY NOTES

A seasonal favourite, this Gin draws inspiration from the Organic Lavender fields in France where it is harvested. It boasts heavy floral notes with a smooth touch of mint.

BC SPIRITS NOTES

Found this little number from Tofino Distillery at Tudor House Liquor Store, not that I need anymore gins; but what's one more. This has a big floral whop on the nose balanced with that very terroir driven Tofino aroma of cut pine and sea breeze, the palate doubles down on that with textural fragrance of lavender and the bite of menthol from the mint.

Alcohol - 45% / 90 proof

Color - Clear

Nose - Classic Tofino terroir driven aromas of cut cedar and sea air with wafts of lavender and hints of mint

Taste - Starts with the classic West coast Gin notes of their house gin, piney, bright botanicals and then slides into soft lavender and menthol mint

Finish - The lavender is predominant in flavor with the spice of mint in the background

Best Enjoyed - Bees Knees variation

BC Spirits "Spirits a Day" #362 - Sons of Vancouver Chili Vodka

DISTILLERY NOTES

If you're adventurous enough to pick up this bottle, we commend you. Because this isn't just another boring, flavourless vodka hiding behind frosted glass, this is a BC Craft vodka infused with scovilles upon scovilles of fresh bird’s eye chilies. It's not for babies.

BC SPIRITS NOTES

The Sons of Vancouver Distillery Chili Vodka has been around since the start of the distillery and I clearly remember tasting it in 2015 at OLO. But revisting and having it on the show for the first time is very fun albeit a little overwhelming. Aromatic pepper spice on the nose kicks into overdrive on the palate with big, spicy punches on the tongue while still balancing fragrant chili. For the spice lover, especially in a Red Snapper.

Alcohol - 40% / 80 proof

Color - Bright orange

Nose - Aromatic and fragrant capsicum peppers

Taste - Starts with that soft vodka base and then decides to tear your tongue apart and then put it back together. Big spice that pierces your tongue and soul

Finish - Once the burn starts to subside, it’s fragrant and aromatic pepper

Best Enjoyed - Red Snapper or Caesar
