Select Judge’s Notes

  • Deeply roasted, nutty nose with elements of green-leaf, floral, plant/botanical, that makes it lively and fresh. Finishes incredibly smoothly, with a deeply roasted flavour and a pleasing note of bitterness. The use of fresh ingredients is obvious in a nuanced palate that smells of the outdoors: tree, plant, leaf, nut, blossom.

  • The spirit demonstrates a complexity of interwoven flavours and aromas which give a sense of a thriving habitat where bees and insects play between the meadow and the forest. Bitter walnut, light honey notes, and woody tannins are prominent.

  • The palate rich, full, chocolatey, like cooked prunes or plums. Quite a special drink. It could be used like vermouth or drink like sherry.

  • It's very complex and exceptionally balanced. On the palate, there's a medium sweetness, which is perfectly balanced with bitterness; there are warming & rich flavours of pronounced walnut, bitter orange, and coffee. There are accompanying and balanced notes of nutmeg, candied fruit, and cloves – this spirit has loads of character and complexity.

  • This outstanding spirit clearly portrays not only a sense of place in its key ingredients and in its lovely flavour profile, but a sense of time and season as well.
