DISTILLERY NOTES

A rhumb line is an imaginary line on the earth's surface used as the standard method of plotting a ship's course on a chart. It is a path with a constant bearing.  Our 4 year path to make rum from BC grown products led us to a method using BC honey, fermented, distilled two times in our small batch copper still, and then aged in oak barrels at our farm in Cobble Hill. We kept our bearings through years of challenges to get to this truly Cowichan version of rum.

BC SPIRITS NOTES

I have gone into depth about BC “Rum” before but wanted to dive in with the Merridale Distillery Cowichan Spiced Rhumb. Rich with stone fruit, spicy vanilla and hints of smoky oak with the addition of fragrant and aromatic psices like clove, cinnamon and nutmeg. Want to throw this is with classic rums in a blind tasting to see if people can pick it out.

Alcohol - 40% / 80 proof

Color - Light copper with golden edges

Nose - Stone fruit, spiced vanilla and toasty oak

Taste - Stone fruit, smoky vanilla, toasted caramel, hints of oak and aromatic Christmas spice

Finish - Round vanillas and spicy oak, just a subtle smoke undertone

Best Enjoyed - Hot buttered Rum
