DISTILLERY NOTES
With the 2007 apple harvest, we fermented special batches of cider specifically for distilling. Our first batch of Cowichan Cider brandy is made from six different blends of cider apples which we then placed in French Oak Barrels of two different sizes, 100 litre and 225 litre. When tasting the brandy, it is best served in a ‘snifter’ at room temperature. Swirl it in the glass and enjoy the aroma.
BC SPIRITS NOTES
Another incredible fruit brandy with some terrific age to it, I honestly don't know of any fruit brandies in BC or across the country that have this much age to them. 7 year old cider brandy blends the brightness and acidity of the apple with nice warming spice, I was expecting more reductive apple pie notes but this still stands up nicely. Must get for the apple brandy lover.
Alcohol - 42% / 84 Proof
Color - Light copper
Nose - Fresh tannic apple skin and flesh, hints of spiced vanilla oak when left in the glass
Taste - Bright and complex apple notes that is complimented with balanced oak, vanilla and Christmas spice
Finish - Long fresh apple notes, hints of oak
