BC Spirits "Spirits a Day" #249 - Okanagan Spirits Indefatigable

DISTILLERY NOTES

Indefatigable is a 4 1/2 year single cask bourbon-style whisky that was finished in a sherry impregnated 30L cask and then put back in the original cask for an additional few months of aging. Bottled at 42% and only 44 bottles made.

BC SPIRITS NOTES

I think this is my favorite Okanagan Spirits Whisky to date, I think the combination of that bourbon style whisky and sherry is impactful. Round, sweet fruit on the nose flows through to gorgeous texture and stone fruit on the palate.

Alcohol - 42% / 84 proof

Color - Medium copper

Nose - Fruity esters, deep sherry notes and a solid whack of vanilla

Taste - That bold, classic Okanagan Spirits BRBN is enriched with that sticky, walnuty sherry tones that just make it explode

Finish - Fruity sweet, rich bourbon notes and long stone fruit finish

Best Enjoyed - Neat

BC Spirits "Spirits a Day" #248 - Wood's Spirit Co. Nocino

DISTILLERY NOTES

Nocino is a traditional Northern Italian liqueur made with unripe walnuts that are still soft in their green husks. It’s the perfect blend of spicy, sweet, and bitter, and it’s delicious served on ice, drizzled over ice-cream, or in an espresso martini or sour.

Woods’ Nochino comprises Summerland green walnuts picked just after the summer solstice and distilled in North Vancouver - inspired by Fabio’s family recipe.

Walnut-forward with espresso bean, orange peel, nutmeg, cinnamon, and clove, Woods’ Nocino is perfect on cold winter nights, apres-ski, or as a summer pick-me-up over vanilla ice-cream.

BC SPIRITS NOTES

I am loving the fact that Wood's has started vintaging their Nocino, so many possibilities down the track with a possible vertical tastings. Being vacuum distilled create amazing flavors, while extracting deep and rich flavors, it also allows the bright walnut notes to sing. Hints of rich walnut, coffee and walnut leaf, just a gorgeous Nocino.

Alcohol - 25% / 50 proof

Color - Dark chocolate brown

Nose - Deep walnut notes with hints of chocolate, coffee and bright acidity lingering

Taste - Myriad of flavors, deep and complex walnut notes with bright and lofty citrus and acidic coffee. A real gambit on the palate

Finish - Not cloying sweet, the richness lingers for quite some time

Best Enjoyed - Neat with dessert

BC Spirits "Spirits a Day" #247 - Stillhead Distillery Rose Gin

DISTILLERY NOTES

We took locally grown Pinot Noir grapes, juiced them, and used that juice to infuse a gin base we designed especially for this gin. We didn’t add anything else as the sweetness of the fresh grape juice was enough to balance the alcohol content.

With beautiful juniper, light spice, and balanced grape sweetness, this special gin will work perfectly in a unique gin and tonic or just about any cocktail calling for a classic gin.

BC SPIRITS NOTES

This new, sold out (sorry) release from Stillhead Distillery is fantastic and surprising. Taking local squeezed Pinot Noir juice and combining it with a custom gin base, this has got everything you want, funky fruit from the juice balancing out with delicious bright citrusy gin. You can drink this straight on the rocks.

Alcohol - 37.5% / 75 proof

Color - Light watermelon pink

Nose - Funky berry notes lean into a strong juniper note and hints of rounded citrus

Taste - Fruity sweet berries, hints of Pinot Noir funk, then flows into juniper popped gin notes and finishes with citrus burst

Finish - Long and fruity, complex gin and Pinot Noir notes linger

BC Spirits "Spirits a Day" #246 - Shelter Point Ripple Rock

DISTILLERY NOTES

Campbell River’s 1958 Ripple Rock explosion is the inspiration for our latest single malt whisky. It has spent 6 years in American oak before finishing for 18 months in an alligator charred Virgin Oak cask. Shelter Point Ripple Rock explodes with intense flavours of chocolate, spices and vanilla! This release is 47% ABV and contains casks that are at least 8 years old.

BC SPIRITS NOTES

This super exclusive distillery only release is quite amazing. Aged for at least 6 years in American Oak and then finished in Alligator char Virgin Oak. This is a beast, it has that classic Shelter Point nuances but then it’s jacked up with a huge bang of richness in cocoa, toffee and brown sugar. This is a must have expression.

Alcohol - 47% / 94 proof

Color - Burnt deep copper

Nose - Classic terroir driven Shelter Point notes, rain over the fields but then something dark and deep lurking underneath

Taste - Starts off classic Shelter Point style and then slowly ramps up and smacks you in the face with heavy dark notes of coffee, cocoa and brown sugar

Finish - Rich, dark chocolate, toffee and hints of vanilla

Best Enjoyed - Neat

BC Spirits "Spirits a Day" #245 - Liberty Distillery Trust Southern

DISTILLERY NOTES

TRUST Southern begins with 100% organic corn grown in Spallumcheen, British Columbia.  It is triple-distilled in our hand-made CARL single copper pot still.  For (3) years, it has rested in new American Oak barrels to gain character, complexity and colour.  Once extracted from barrel, the corn based whiskey is then blended with Liberty’s rye for a final whiskey composition of 75% corn and 25% rye.

TRUST Southern presents with a beautiful rich amber tone.  On the nose, TRUST Southern offers toasted orange notes.  Mandarin orange peel, oak, and textbook ‘ripe’ peach character are underscored by a layer of warm caramel and vanilla.  Rich and well balanced with spice, honey and subtle sweetness.  Warm and soothing, with a long lasting finish that just lingers on and on.

BC SPIRITS NOTES

Liberty Distilleries foray into a bourbon style whisky is very good. They first triple distill 100% corn and age that in American oak for over 3 years. Once that is aged, they blend with their house rye at a mix of 75% corn and 25% rye; very Canadian way of doing things. The palate is dry, punchy corn notes with their aromatic spicy rye balancing out the mix; Canadian corn is notoriously dry in comparison to it's southern counterparts, so this gives you rich complexity but isn't as rich sweetness as American bourbon.

Alcohol - 43% / 86 proof

Color - Dark copper

Nose - Complex, huge corn bomb, hints of the spicy undertones and finishing with that gorgeous American oak.

Taste - Toasty notes kick it off with vanilla, sweet stone fruit, hints of toffee and caramel and then finishing with that warming spicy rye

Finish - Vanilla, gorgeous oak, toffee and hints of that spice

Best Enjoyed - Old Fashioned material

BC Spirits "Spirits a Day" #244 - Esquimalt Wine Co. Rye Barrel Rosso

DISTILLERY NOTES

Single Barrel Limited Release - Only 533 bottles were filled from this barrel! Once it's gone, it's gone!

When we found out Stillhead Distillery was emptying out some whisky casks, we drove straight up the Malahat to convince them to let us fill the barrels back up with our Rosso Vermouth. They agreed!  Within two hours of the cask being emptied, it was back in Esquimalt and full of Vermouth!  This is the start of a new cask-series were we age our Vermouth in a variety of used barrels from different distilleries across BC. Each release will be totally unique and never to be repeated again. 

Cask type: Refill American Oak, 200L

1st fill - Bourbon, 2nd fill - Stillhead Rye Whisky

Aged for 12 months from Dec. 2019 to December 2020

Caramel, vanilla, rye spice and antique wood lay on the shoulders of our signature Rosso Vermouth. This is a special one folks. Enjoy it! Word on the street is Stillhead Distillery will be releasing their first Rye Whisky soon - this and that in a Manhattan! Booya!

BC SPIRITS NOTES

We tasted the gin barrel aged rosso which is perfect for your Martinez loving drinker over xmas. Again, super limited edition, this one is aged for 12 months in ex bourbon, ex Stillhead rye barrels and gives the rosso a unique spice and depth in the back of your tongue. Balanced sweetness and dry spice makes this a must have for the Manhattan drinker.

Alcohol - 16.8% / 33.6 proof

Color -Translucent deep red

Nose - Classic EWC rosso nose, hints of Blueberry, a little umami, then deep spice, hints of dry vanilla and oak

Taste - Rich and gorgeous mouthfeel, you get hit with classic rosso and then it just tumbles you down deeper into Christmas spice, sweet berries and hints of spicy of vanilla

Finish - Lingering bitter tones from the vermouth and Christmas spice

BC Spirits "Spirits a Day" #243 - Lohin Mckinnon Single Malt

DISTILLERY NOTES

Matured in premium oak barrels, this smooth and refined small batch Whisky is made from the finest Canadian Malted Barley and Pure B.C. water.

The aroma is rich with darker fruity notes like cherry or grape, subtle honey, vanilla and pleasantly woody. The golden liquid sits on the palate with a touch of green apple skins, buttery notes, woody and soft textured mouthfeel and the finish is medium length, fruity and slightly drying at the end. Best enjoyed with a splash of cold filtered water to release the full flavour of this hand crafted gem.

BC SPIRITS NOTES

If you are looking at exploring the world of BC single malts this is a great starter. Memories of Glenkinchie 12, lowland single malts, light, floral like cut crass and rolling meadows. On the palate we get bright citrus, sneaky mid palate cocoa and caramel and that floral aromatic grass and stone fruit notes.

Alcohol - 43% / 86 proof

Color Light wheat gold

Nose - Bright, aromatic, fragrant cut grass, grapefruit peel with a hint of cocoa

Taste - The palate is still light, that aromatic nose in the front but then rolling into that dry cocoa, hints of toffee and vanilla. Just a lingering toastiness.

Finish - Long, aromatic with that beautiful dry cacao.

Best Enjoyed - Neat

Light floral and pine notes build into cinnamon and cream before jumping into our signature Rosso flavour profile. This would work wonders in the classic Martinez cocktail!

BC SPIRITS NOTES

What a treat. A collab between Esquimalt Wine Co. and Stillhead Distillery in utilizing the old barrel aged gin barrels from the distillery, Esquimalt Wine Co was able to fill them while they were still wet. This allowed the vermouth to intermingle and be enhanced over 13 months in the barrel. The ex whisky/gin is a match made in heaven, the Rosso has mellowed and gained bright gin notes with hints of the oaky vanilla in the back. Super limited so get a bottle ASAP!

Alcohol - 16.8% / 33.6 proof

Color -Translucent deep red

Like a brick in a silk purse. A love tap with a baseball bat. An elephant ballet. Don’t let it fool ya. This one knows how to put its foot down.

BC SPIRITS NOTES

Wow! I haven’t tried this before from Bohemian Spirits. Pink Gin makes you think soft fruity berry flavors and does not prepare you for the kick in the face of fresh juniper. On the nose, it smells like a juniper bush through a wood chipper and then on the palate translates to spicy juniper, hints of citrus and finally that subtle berry note.

Alcohol - 40% / 80 proof

Color -Light pink

Nose - Huge juniper spice on the nose, like a bush has been put through a chipper

Taste - Rich juniper hits, complex spice with strong aromatics that leads to citrus peel and hints of the subtle pink berry that took you down a very different path

Finish - Subtle aromatic juniper with richer citrus and berries

Best Enjoyed - Classic G&T with this one

BC Spirits "Spirits a Day" #240 - Goodridge & Williams Western Grains

DISTILLERY NOTES

This exceptionally smooth whisky was made in Western Canada, a region famous for the quality of its grains. Bourbon barrel aging gives this blended whisky notes of new wood, stone fruit, toffee and honey.

BC SPIRITS NOTES

Haven’t tried this one in a really long time, Goodridge and Williams Western Grains screams Canadiana. Subtle spice, stone fruit and toffee and it flows perfectly through on the palate. Classic hints of rye, toffee and honeyed vanilla oak; this is not trying to reinvent the Canadian whisky wheel just elevate it.

Alcohol - 40% / 80 proof

Color -Burnt copper

Nose - Toffee, stonefruit and light spice

Taste - Classic Canadian style, toffee, light rye spice and hints of vanilla oak

Finish - Finishes toasty oak and vanilla with hints of lingering rye spice

BC Spirits "Spirits a Day" #239 - Tofino Distillery Limoncello

DISTILLERY NOTES

This nod to the classic Italian liqueur does not stray far from its inspiration. A precise combination of organic lemons and cane sugar come together to create this distinctly lemon-yellow tipple. 

Using only the zest of the lemons makes this liqueur bright but not tart, while the organic cane sugar allows for a natural sweetness and creates a velvety texture. 

BC SPIRITS NOTES

I have a guilty pleasure in Limoncello because it reminds of childhood. Tofino Distillery Limoncello is gorgeously balanced with bright, acidic high notes of fresh peel and lemon sweetness. Long and flavorful, aromatic lemon, sweet citrus just lasts forever on the palate.

Alcohol - 28.5% / 57 proof

Color -Lemonade

Nose - Sour sweet lemonade on the nose

Taste - I described this as suburban lemonade stand and I am going to stand by that. Not overly sweet, sour lemonade all the way through

Finish - Sour, tart lemons

One of the only dedicated schnapps producers in the province, Elder Bros Farms Whack a Vole Schnappps are delightful, 30% alcohol with a huge whack of real elderflower and rich cherry notes. This is another xmas spirit you didn’t know you needed.

Per Se Vodka is the pure expression of the 100% BC grown wheat we use to make our spirits. The grain is milled, fermented, and distilled, before being diluted with our own spring water to create an award winning spirit with body, sweetness, and a creamy mouth-feel. This vodka is best enjoyed sipped solo, but in true Ampersand fashion, it works well in your favourite cocktail.

BC Spirits "Spirits a Day" #236 - Mad Lab Spirits Spiced Chocolate Mad Dog

DISTILLERY NOTES

Spiced white single malt, infused with cacao, cardamom, cinnamon, and an assortment of select spices.

BC SPIRITS NOTES

Another mental creation from the crazy mind of Mr. Mad Lab Spirits himself. A 40% spiced chocolate infused Mad Dog, it’s the Christmas spirit you didn’t think you needed. Bold Christmas spice and dry cacao will jack up your hot buttered rum or hot apple cider.

Alcohol - 40% / 80 proof

Color - Translucent chocolate brown

Nose - Dry and complex Christmas spice with nutmeg, cinnamon and clove with hints of cacao powder.

Taste -Huge spice bomb, aromatic and spicy then flowing to dry chocolate and cacao. Just a huge flavor bomb.

Finish - The spice and chocolate lingers forever

Best Enjoyed - In a hot buttered rum, hot cider, must have for Xmas.

Cocktail of the Week # 3 - Martini

Let’s explore a classic martini two ways. Keeping the same recipe but changing the gins, vermouth and garnishes.

For a lemon twist garnish we did

LEMON TWIST MARTINI

1 1/2 oz (45mL) @phillipsbeer Discovery Street Citrus Gin

3/4 oz (22.5mL) @ampdistillingco @rathjencellars Imperative Vermouth

Glass - Nick and Nora / small coupe

Method - Stir with ice and strain

Garnish - lemon peel

For the olives, we did

OLIVES MARTINI

1 1/2 oz (45mL) @deepcovecraft Mediterranean Gin

3/4 oz (22.5mL) @beaufortwines Vermouth

BC Spirits "Spirits a Day" #235 - Okanagan Spirits Cranberry Liqueur

DISTILLERY NOTES

The zesty sourness of our liqueur allows for excellent pairings with desserts, it also makes an exquisite Crantini and Cosmo.

The process that Okanagan Spirits uses to extract flavor for their liqueurs creates a fresh and full flavored with crisp acidity that balances any sweetness. This is cranberry juice, full bodied, fruity sweetness with epic residual acidity that leaves you lingering. You should be using this in your cooking and cocktails over Christmas for sure.

Alcohol - 24% / 48 proof

Color - Deep purpley red

Nose - Fresh crushed cranberry and a hint of marscapone

Taste - Liquid cranberry, minimal alcohol notes, tannic, fruity, sour sweetness with bright acidity. Cranberry from start to finish

Finish - Bright acidity leaves you with sour sweet cranberry notes

Best Enjoyed - Use it in all your cooking and desserts this season

BC Spirits "Spirits a Day" #234 - Bruinwood Distillery Quince Liqueur

BC SPIRITS NOTES

It’s Xmas season and we will be enjoying some delightful cheese boards and you need this little number from Bruinwood Distillery Their quince liqueur is liquid quince paste, tart, tannic, sweet and funky; one of the best pairings for this seasons cheese board decadence.

Alcohol - 25% / 50 proof

Color - Vibrant orange copper

Nose - Almost stewed apple on the nose

Taste - Quince on quince, from dry tannic peel to the rich quince paste. A little funky notes and aromatic quince notes.

Finish - Aromatic quince with a long drying finish of tannic peel

Best Enjoyed - Really interesting cocktail ingredient, also on it’s own with a cheese board

BC Spirits "Spirits a Day" #233 - Spinnaker's Botanical Beach Navy Strength Gin

DISTILLERY NOTES

Navy Strength Gin was one of the most popular drinks of the colonial English Navy, but with its increasing popularity distillers and merchants began to dilute their gin in order to turn a higher profit. As gin was usually stored below deck with gun powder, it was realized that if gin was spilled on the gunpowder and it smoked or failed to light, the gin was below an acceptable standard because of its lower proof, or higher water content. If the gin that leaked onto the gun powder was at least 114 proof, or 57%, then the gun powder would still light. This is how Navy Strength Gin was tested, and in turn popularized. Now today, we get to enjoy a higher proof gin for a more stiff and flavourful drink.

BC SPIRITS NOTES

This was a recommendation from my Friday night live stream, the Spinnaker’s Botanical Beach Navy Strength. As soon as you crack the bottle, you get the huge piney forest on the nose; in the glass, that pine is complimented by grapefruit, mandarin and woody juniper. On the palate, layers of flavor from the pine to the earthy juniper to the bright citrus peel. Bold gin, perfect for a Gimlet.

Alcohol - 57% / 114 proof

Color - Clear

Nose - Huge whack of pine flows through to complimentary notes of grapefruit and mandarin

Taste - Big texture obviously with the alcohol content, the pine notes subdue for complex notes of woody juniper, earthy botanicals and bright citrus notes

Finish - Long and lingering pine, grapefruit and woody juniper

Best Enjoyed - Gimlet

BC Spirits "Spirits a Day" #232 - Liberty Distillery Trust Canadian Whisky

DISTILLERY NOTES

TRUST Canadian Rye begins with 75% organic rye and 25% organic barley grown in Armstrong, British Columbia. It is triple-distilled in our hand-made CARL single copper pot still. For (3) years, it has rested in mature 220-litre red Burgundy barrels to gain character, complexity and colour. It is then transferred to finish in new American Oak barrels.

BC SPIRITS NOTES

Went out of my usual haunts for this one today, the The Liberty Distillery Trust Canadian Rye is a silent little number that needs more love. 75% rye, 25% malted barley, triple distilled, then aged for 3 years in ex red burgundy casks then finished in new American oak barrels. This all leads to unique rye spice, blending with bold funky fruit and dry vanilla. Great tipple, try this in a Manhattan.

Alcohol - 43% / 86 proof

Color - Dark burnt copper

Nose - High rye notes, funky red fruit notes and hints of vanilla

Taste - Sweet rye bread, dry cinnamon and vanilla with soft funky red fruit. Very melodic, high rye spice and deep bassy

Finish - Long and spicy, with hints of dry long vanilla notes

Best Enjoyed - Manhattan
