BC Spirits "Spirit a Day" #131 - Devine Spirits Amber Honey Shine

DISTILLERY NOTES
Our classic Honey Shine has become a flagship spirit for us here at De Vine. Made from 100% local honey; fermented, distilled, and aged on site in once-used casks. Soft caramel notes with a backbone of wood barrel spices. A rich mouthfeel identical to rum, with notes of Bourbon and Cognac. Finishing with a call-back to its namesake, honey.

Deliciously rich, elegantly smooth, warming, spicy, and just a little bit sweet.

BC SPIRITS NOTES

The aged Devine Spirits Honey Shine is in rum style. I really think we need to make Somel (honey spirits) a thing for BC. This one has amazing dunder nose, complex spice and hints of vanilla from the bourbon barrel aging. This would sing in a daiquiri.

Alcohol - 42% / 84 proof

Color - Light golden copper

Nose - Light grassy dunder nose with hints of vanilla spice

Taste - Dry grassy notes with vanilla spice coming from the barrel. Hints of stone fruit and honeycomb.

Finish - Vanilla spice and grassy dunder tones

Taste - Sweeter than the traditional styles in BC, very fruity sweet, plums, apricots, with rich undertones of oak, vanilla and caramel

Episode #26 - Dawn and Doug Lennie from Legend Distilling

Doug and dawn.png

I have known Dawn and Doug for years and have always been a massive fan of their products. I get to chat to them about their humble beginnings along with spirit development, whisky and using the ingredients found around the distillery.

ABOUT LEGEND DISTILLING

Pioneers in the Okanagan local food and beverage scene, Doug and Dawn Lennie are the original founders of The Bench Market Cafe in Penticton. In 2012, their passion for bringing people together over a glass or at the table was ignited by their desire to innovate unique, high quality spirits - something that had not been seen before on the Naramata Bench.

In 2013, the Lennies took over the site of the former Doctor’s Office, which had served as the only doctor’s offices in Naramata for over 30 years. With grit and vision, they transformed the property into the current Distillery and Tasting Room, complete with patio, garden, an outdoor restaurant and some of the best lake views in Naramata.

“We believe that by being passionate about local ingredients we are able to support our farmers, producers and other small businesses, which is important to us…but beyond that, we are able to tell a story through the spirits and provisions we make; a story of this amazing place, it’s history, it’s legends and the incredible people who live here. ”

BC Spirits "Spirit a Day" #127 - Okanagan Spirits Huckleberry Liqueur

DISTILLERY NOTES
Each year, our dedicated wild foraging crew compete with the local bear population to deliver us with this delicate liqueur.

Huckleberries are not commercially grown and typically only bear fruit under ideal growing conditions. The wild crops vary significantly in size from year to year depending on how late frosts may have diminished pollination of the flowers to more recently where dry drought-like conditions have reduced the overall crop to minimal.

Both the bears and our foragers have come to an understanding on only harvesting what is needed so as not to upset the other crew. Sustainability, naturally!

BC SPIRITS NOTES

Huckleberries can’t be propagated so teams of two go to pick the wild berries, one to pick and the other to watch for bears. The Okanagan Spirits liqueur like all their liqueurs gives a look into how real fruit liqueurs actually taste, like biting into a fresh huckleberry; sweet, tart, bright acidity and hints of tannic skins and pits.

Alcohol - 24% / 48 proof

Color - Deep purple all the way to the edges

Nose - Fresh, juicy huckleberries

Taste - Complex flavors ranging from soft sweetness, tart and acidic high notes, tannic skin and juicy huckleberries

Finish - Dry, slightly tannic, not cloying sweet with a hint of green notes

Best Enjoyed - Bramble variation

Review #51 - Mad Lab Bitters

Mad Lab Bitters

I have tasted through a few local bitter companies in the past, Mad Lab Spirits are known more for amazing products like their Ulker Raki but their bitters line is something special. Really enjoyed tasty these obscure flavors.

ABOUT MAD LAB

Mad Laboratory started off as a long time dream and began to be realized early 2013. Thus began a long difficult journey to opening and operation of the Lab. With almost no budget to speak of we began putting together the equipment needed, scrounged and borrowed, re-purposed and rebuilt, we were able to set up the basics of what we wanted to create.

With a tremendous amount of support from friends and family we managed to get a logo and label designed, still built, fermentation tanks installed, fire suppression upgraded, the locations drainage and ventilation upgraded, plans drawn, re-drawn, and re-drawn again.

Our still was built from donated tanks and put together by a talented welder friend, put together in the configuration that we felt would produce the finest end product. Direct-fire pot still, with a thumper and shotgun condenser, allowing us to produce a smooth spirit, with the ability to retain flavours that we wanted to remain in the finished product. The flame from the still provides a toasty, almost caramel like finish, making Mad Laboratory spirits a rich and wonderful experience.

All this came together to where we are today, producing a fantastic spirit, something we are very proud of, and hope to continue on long into the future.

BC Spirits "Spirit a Day" #125 - Sheringham Distillery Kazuki Gin

DISTILLERY NOTES

Kazuki Gin was born out of love of both Eastern and Western botanicals and gin making techniques.

Alayne fell in love with Cherry Blossoms while living in Asia and Jason became intrigued with Yuzu as a professional chef. KAZU, meaning “harmony”, is the blending and respect for both East and West cultures. KI means “radiance” and is an ode to the radiant flavours of the botanicals as they dance on your palette. Cherry blossom petals and yuzu peel were imported from Japan. From Westholme Tea Farm we procured green tea leaves and flowers. Expect dynamic flavours from start to finish with the unique essence the Kazuki provides.

Made from our Vodka, with botanicals sourced locally and from Japan, including Japanese Cherry Blossoms and Green Tea + Flowers from Westholme Tea Farm in Cowichan Valley.

BC SPIRITS NOTES

The first Japanese inspired gin in BC was from Sheringham Distillery, I did the Omakase a few days ago. This is complex, deep citrus notes, piney juniper and floral aromatics of cherry blossoms and green tea flowers. Overall, a unique, complex floral forward gin.

Alcohol - 43% / 86 proof

Color - Clear

BC Spirits "Spirit a Day" #115 - Merridale Cowichan Spiced Rhumb

Cowichan Rhum

DISTILLERY NOTES

A rhumb line is an imaginary line on the earth's surface used as the standard method of plotting a ship's course on a chart. It is a path with a constant bearing.  Our 4 year path to make rum from BC grown products led us to a method using BC honey, fermented, distilled two times in our small batch copper still, and then aged in oak barrels at our farm in Cobble Hill. We kept our bearings through years of challenges to get to this truly Cowichan version of rum.

BC SPIRITS NOTES

I have gone into depth about BC “Rum” before but wanted to dive in with the Merridale Distillery Cowichan Spiced Rhumb. Rich with stone fruit, spicy vanilla and hints of smoky oak with the addition of fragrant and aromatic psices like clove, cinnamon and nutmeg. Want to throw this is with classic rums in a blind tasting to see if people can pick it out.

Alcohol - 40% / 80 proof

Color - Light copper with golden edges

Nose - Stone fruit, spiced vanilla and toasty oak

Taste - Stone fruit, smoky vanilla, toasted caramel, hints of oak and aromatic Christmas spice

Finish - Round vanillas and spicy oak, just a subtle smoke undertone
